Yum!!! I have a humble brag. I made the best dinner the other night! I chopped up broccoli, zucchini, carrots, mushrooms, yellow peppers and grape tomatoes. Seasoned it with some Cavendars Greek seasoning and black pepper. Sautéed them in some olive oil , till just tender then tossed them in with some whole wheat couoous and topped with feta.

Thanks! I am making the shift from low carb to a more ‘Mediterranean’ style eating. I am looking for a more sustainable way of eating versus going on/off. It just always seemed inherently wrong to me that fruit was banned and a lot of veggies. I have never known anyone who had weight issues because of fruits and veggies! LOL So I am trying to eat more plant based. I am loving it. My skin looks so good. I am not sure about any weight loss because the batteries are out on my scale. LOL Tonight I am making a chili. My son doesn’t like beans so there are no beans in the chili, but I made a pot of beans with pintos and black beans, added in fire roasted tomatoes, charred corn and poblanos

Texannie - have you ever seen any of Thug Kitchen's cookbooks? They are all plant-based but do not rely on soy too much (I've a girlfriend with soy allergies). I ADORE THEM! Their food is delicious, their humor is fantastic (they say things like, "bring that sh*t up to a boil) and they have a 30-minute recipe book titled Fast as F*ck. The first book, Eat Like You Give a F*ck, I got for my son when he went away to college since he'd be cooking for himself, and vegetarian eating is cheaper. They also have Twitter and IG accounts and post recipes there frequently. The recipe I'm trying next from them is WINE CAKE for my son's birthday this month!

Texannie, see if the library has "The New Mediterranean Diet Cookbook" by Nancy Harmon Jenkins. A lot of good recipes in there. My favorite recipe is Lebanese garlic marinated chicken on the grill with garlic sauce.

Teach and Tex, and anyone else who eats veggie or vegan, can you guys recommend a non-dairy or lactose free cheese. I'm not fond of soy, other than that I'm open to anything. Right now I'm looking for something that'd be good for pizza.

Thanks Grooch! I'm going to try a few of those. Kota ran by the health food store yesterday and asked for recommendations for pizza, they pointed her towards the Daiya shredded mozzarella cheese. And funny enough, I thought it felt really weird, which the article says as well. But, also like the article says, it melted and it tasted pretty good.

I was working in our church kitchen this weekend and somebody had a Vidalia Chop Wizard. It worked great! (Not to mention that you can take out a lot of frustration on it...LOL!)

I just read in interesting tip for making deviled eggs. The tip was to put a rubber band around an egg carton. Turn the carton, on its side, in the refrigerator over night. When you boil them the next day, the yolks will be in the center of the egg.

I already put a carton on its side. I will boil some egg tomorrow. I make my hard boiled eggs in a microwave cooker. No need to puncture the shell. 8 minutes to cook 4 eggs.

I just got a funny picture in my head of chickens laying eggs while laying on their sides. Of course the yolks will be in the middle. Don’t mind me, I have a bizarre sense of humor sometimes.

Pamy, some of the yolks aren't centered and when you fill them they have one thick side and one thin side. It doesn't look good.

Apparently our southern chickens are better balanced than in other places. I have never seen a yolk that is not in the middle of the egg! Is it because I always buy eggs that I am going to hard boil at least a week ahead of time so that the sulfur compound (sulfide, sulfate, ???) gas can build up in the shell to make shelling a breeze? Perhaps that aging also stabilizes the yolk? Also I always boil my eggs in deep water - at least an inch over them when they are standing on end. The gas that had developed over the last week is what stands them on end -

Perhaps you just have exceedingly polite eggs? That reminds me that I need to test the eggs in my frig and see if they are still okay. Is it if they float in water they are okay or if they sink? I always get those things mixed up!

I worked on a egg farm, from the bottom dungeons (underground)rows and rows full of chickens caged 6 or more per slanted cage', when the chickens laid a egg it would roll down the cage floor to a trough below each cage' (almost like a rain gutter with lower sides) We had carts that rolled up and down each isle collecting the eggs and putting them onto the convener belt that took them up to the top floor' as the eggs bobbled around on the belt and separated into sm, med, and large.They are then ran thru a shower of water to wash the Egg, sinking is bad, also look for a very slick texture on the shell, this usually means its old, a 'coarse' texture is usually very fresh. This was almost 40 yrs ago and on a ranch,who knows how its done now' Its brutal, seeing all the birds just crammed in the little pens, its very stinky and humid.. I was 19/20 yrs and had no idea at the time what was really going on. One thing I have def learned is to crack the egg into a separate bowl 1st, before adding to your cooking. If you drop a egg into your ingredients and its rotten, you will need to dump the entire thing' and the smell will send you running...
