I have a great recipe for authentic chicken tortilla soup, written down from memory from a cooking lesson Bigdog and I attended in South Padre Island, TX, maybe 20 years ago. At that time there was a social event at the timeshare tower in the huge condo complex where we have mostly spent the past 26 winters. They let the Mexican maids conduct a cooking class! Which was a brilliant idea! I love this soup to this day.

It was really good, I think this new chef has upped the game. The gravy had mushrooms, onions and green peppers, the peas had pimento chips. In the past the gravy was just brown with no seasoning/flavoring.
