Mrs Mack has a number of Taste of Home recipes printed out and in her recipe binder. Great taste and usually easy to make and reasonable cost. 👍

Tomorrow night Chef Mack takes the night off. Either we go out to eat or it’s a fetch dinner. If it is a fetch night Chinese sounds good right now but who knows what will sound good tomorrow. Mrs Mack is off tomorrow as she cranks back her schedule approaching her retirement here in a few weeks.

I made Paula Dean's southern meatloaf for dinner tonight.

I do not recommend it. I googled for a recipe that used 1 lb of ground chuck and her's came up and I figured it would be safe, and it was different.

You use quick oats for the binder (I always use a slice of bread soaked in milk, but i figured the oats would be healthier) and you add diced tomatoes to it.

It's very bland and I realized afterwards she only has salt and pepper for spices.

And it falls apart when you take a forkful from the slice.

Oh, well.

Potatoes au gratin

(It’s cold and too cold to grill outside so this is a favorite winter meal for us. We both grew up on basically meat and potatoes mid-west food.)

French toast, Bacon, Fresh Fruit OR

Spinach, Artichoke Quiche with bacon and fresh fruit.

Both served with Vegetable Lentil Soup and Assorted Bread

Dessert: Coconut Creme Pie

Yep, Scoot, now that I am not moving I will get back onto improving the Bistro. He actually served sweet potatoes mashed with the Salisbury steak -- that is not acceptable, LOL.
