TNT, that is pretty surprising. My first question is "how is the wine". We have wine here for some events and at first it was terrible, but now it is much better. And always for Happy Hour on Thursdays.

We are having Mimosa's this weekend for brunch ... it's Halloween brunch.

Lemon Salmon -- Butter salmon with lemon juice served with creamy risoto and GRilled Asparagus OR

Chicken Pot Pie --Chicken, potatoes, carrots, peas, and mushrooms, slow cooked with Herbs and topped with Baked Butter Biscuit.

Cream Puffs for dessert.

I've had better wine, but it is passable. I aleayspreach that a cheap white is better than a cheap red and that still holdss true for these. I am thankful to report that they are NOT serving TN wines! There are MANY vineyards in the state and two within 35 miles. .

Arrington is co-owned by Kix Brooks of Brooks and Dunn and is probably within 20 miles. This vineyard puts out a respextable product. There is another one up towards the KY state line thatoffersfruity- and berry-base wines.

Our cloth napkins and tableclothes come out for the special events, and of course depending on the decorations.

Right now we have a giant witches cauldron in the dining room, LOL.

Oh and the Salmon was fabulous last night.

Saturday was Roasted Pork -- slow roasted in garlic sauce served over white rice with sauteed spinach and mushrooms OR

Chili with Cornbread -- southern Style chili -- Beef, red beans, tomatoes, onions and red peppers served with cornbread, topped with sour cream.

Carrot Cake for dessert.

Country Fried Steak -- breaded and fried steak topped with country gravy served over mashed potatoes and roasted vegetables.

We serve out "southern style" chili over spaghetti and tamales and topped with chopped onions Fritos and shredded cheese! It is referred to as chili five ways -

For MANY years I hosted a chili supper for my HS class alums. We usually had around 20 give or take a couple with folks returning from as far away a Egypt!!!

Here’s the recipe we use for taco soup. https://www.simplyhappyfoodie.com/instant-pot-taco-soup/#wprm-recipe-container-4978 We do fix it in our Instant Pot but my wife says she sees no reason the recipe couldn’t be prepared on a stovetop. In fact I think the author of the recipe says it was converted from a stovetop recipe. My sister-in-law substitutes ground turkey for the beef but that has virtually no impact on the taste. It was yummy last night and this recipe easily is enough for one meal for a family of four or a couple of meals for a couple like us. We froze the leftovers late last night and will have it later.
