Here's a photo of the delicious tub of borscht I just made. The sour cream will be added to individual bowls to taste, not the whole tub.

I had to post about the borscht because I was getting embarrassed that most of the food I posted about was so fattening....hahaha

But honestly I try to cook mostly healthy, it's just that the food I get excited enough to post about is always the fattening stuff! :-)

LOL, Naja, we try to eat pretty healthy here. Lots of veggies and fruits (especially in summer,) whole grain breads and pastas, lean meats. Yet, it never, ever fails that someone will come by to visit or stay for dinner on the night I've got hot dogs and pork n beans planned and Kota's baking cupcakes, lol.

Going to fix beef and chicken fajitas with peppers and onions, refried beans, Mexican rice and queso. I also got taco salad bowls, lettuce and tomatoes for those that want to go that direction.

Grilled chicken, Greek quinoa salad, dragon's tongue green beans that I put in the freezer last summer. The summer stock is now about gone, so I can start restocking it with this year's bounty!

Teach, what's in Greek quinoa salad? I made quinoa tabbouleh the other day...delicious! And I have an America's Test Kitchen quinoa pilaf in my regular rotation. That stuff is so delicious that its nutritiousness is a secondary consideration at this point.

Tish - I put in cucumber, red onion, tomatoes, black or kalamata olives, lemon juice, oregano, mint, feta cheese and a bit of olive oil and salt - all added to cooked quinoa. I like it a bit warmed up, but it can be eaten cold as well. Sometimes we just add shrimp to it and call it a meal by itself!

I had to cook quickly some white mushrooms I bought last week, so I had the most yummy filet of pan fried white fish with a giant side of sautéed white mushrooms.

DH is allergic to fish (so he says), so he had a frozen pot pie.

We had steak fajitas a couple nights ago for dinner, and since I have some tortillas and avocados left I am going to make breakfast burritos for dinner tonight.

Eggs, avocado, onion, shredded cheddar, tomato, and whatever else I can find.
