I just made mashed celery root for the first time.

I mixed it with mashed potatoes.

It was good. It tasted a little like parsnips.

Last night I had the best chicken enchiladas, beans/rice, and guac and chips. Went to my fav Mexican restaurant...don't think I have been there in at least 6 months so it was especially good.

My DD made enchiladas filled with her own broccoli, spinach and bean saute and wrapped in a home made tortilla and topped with tomato sauce and cheese. They were delicious! Oh and she made bread pudding with home made ice cream for dessert.

Tonight I made my famous lasagna, but it tasted a little weird even though I thought I made it the same way as always.

After dinner I was putting away the spices and saw what I did.

I had put parsley flakes instead of the Italian seasoning mix into the Ricotta cheese mixture.

There was enough Italian seasoning through the Italian sausage and the sauce, so it didn't ruin it, but it sure added a new flavor.

Sounds good! Last night we had leftover homemade lasagna. My DD likes to cook for us on Sunday and she usually makes enough for two dinners. Tonight we are having burgers, though I may have to dodge raindrops at the BBQ.

Will be just OK to good. I fell and broke my hip on Dec. 19. I'm current in a rehab place.

If anybody likes DiGiorno pizzas, you have to try Walmart's copy. It's every bit as good, and half the price. That's what's for dinner tonight. I buy extra fresh sliced mushrooms to put on top.

DH saw a meatloaf recipe on TV that used Ritz crackers instead of bread. So I'm making it tonight. He eats 95% of his nourishment through his feeding tube, so that little bit he eats with his mouth I really try to make it something so yummy that he thinks it's worth the hassle.

It was super! DH ate more through his mouth than he has in a long time. You don't have to feel bad, Mame. He's pretty much living life normally now, except for the feeding tube. (he had throat cancer and a couple spots on his lungs, but it's all ok now. The radiation ruined his epiglottis so when he eats, he chokes a lot).
