One quarter of DH's yummy lox (smoked salmon) and bocconcini cheese on 12 grain bread sandwich, since I just finished a late breakfast (yogurt and hot cereal) and he offered me a nibble. Blueberry herbal tea.

mmmmm, we just had breakfast burritos for lunch. Fresh ground pork sausage, scrambled eggs, shredded cheddar. I piled them so high with fresh diced tomatoes that I couldn't roll them all the way shut. I like to add some fat free sour cream, but DH likes to pour on the salsa.

My house smells so yummy right now because a couple hours ago I started a pot roast in the crock pot with all the fixins. Heck, I may not wait until lunch. I might have it for breakfast :-)

I like to make my own salad bar type salads at home & then create what I call my own salad bar plate & take to work for lunch. Today I had a romaine lettuce w/sliced radishes, purple onion, bell pepper, smoked turkey, bacon bits, & shredded cheddar topped w/lt ranch dressing. Also on my pre fixed plate was pea salad & cole slaw. These kind of lunches are such a fav of mine & I change up the salads. I like pasta salads & different meat salads like ham, chicken, or tuna. I always use romaine lettuce but switch up the other veg's based on what I have. I take this type of lunch to my office at least once/wk & usually twice.

I'm doing another overnight crock pot for tomorrow's lunch. This time I'm making a double recipe of split pea soup and freezing half. This 8 quart jumbo crock pot is the best thing I have invested in in a long time.

I just made a tub of egg salad. I used a dozen jumbo eggs. Hopefully it will last for lunches and/or snacks for at least 2 or 3 days.

Roasted red pepper ranch dressing over tossed salad, green bean casserole with house-made mushroom soup and house-made frendch fried onion, rice, Creole baked chicken, shrimp and crawdfish etoufee, rustic French baguette, and Bananas Foster bread pudding.

I volunteered today in the Culinary Arts Center at our local food bank. Twice a week we open to the public for a gourmet - see above - lunch as a fund raising project.

Next week is American Roadhouse. We have firve set menus that rotate as well as a Chef's Choice as the sixth option. The CC has beeen many different things - Irish near St. Pat's Day, Mediterrranean Rim, Jamaican, German, etc.

Wow, that all sounds so wonderful I feel silly posting what we are having.

We are going retro and having the original Shake-n-Bake chicken. :-) I still have 40 minutes to think on the side dish while it's baking. Probably just some steam in the bag microwave broccoli.

Naja, shake 'n bake sounds yummy. And a great idea. I'm going to put it on my grocery list. Never done it myself but I've had it and enjoyed it years ago.

Naja - I certainly don't eat that way at home! I try to limit my animal protein intake to three times a week -cholesterol issues - so I eat at SH, bring home leftovers for one meal, and only cook one other meat meal a week. Lots of Kroger salad bar and soup suppers!

I made a double batch of this homemade cream of mushroom soup today. It is delicious!

I used this recipe except I used half&half instead of cream, and a little more flour and salt than the recipe called for.

Lunch? I rarely eat out. I've been eating THE SAME THING for lunch for a good number of years. I still enjoy it. It's certainly reasonably healthy. I could make it with my eyes closed -- almost. I'm sure I've said what at sometime in the past so I won't repeat. Good stuff!
