And strangely enough I know this from visiting South America a few times and observed it being sold cooked by street vendors, and learned on our last trip that Peru now has over 400 varieties, unless it is 4000, which is probably right because of how the question is asked, and tasted some of the street stuff, and the kernels are HUGE, and they taste just wonderful, unlike North America's highly overly-hybridized crop that is so sweet you might as well be eating a spoonful of sugar. Don't get me going on this topic, because it is one of the topics I can talk a long time about - it is CORN. Hahahahaha, I will sure be embarrassed if that is not the answer.

Oh hell. Corn in the Andes was the one I was absolutely sure of. Quinoa? And yes, I have had quinoa (on cruise ships, very foo-foo), and it is fine; it is just not anything to walk across the street to get. Peruvian corn from a street vendor at the entrance to a 7-11 type of store? Yes, get some.
