We did a dump soup - leftover pork, potatoes, carrots, onions, garlic, broccoli, cauliflower, pinto beans and mushrooms in a veggie broth w/blended tomatoes and lots of Italian seasonings and a couple dashes of red pepper flakes and ancho chili powder. The beer bread that accompanied it was my favorite part of the meal, though.

Slowcooker steak sandwiches tonight. You cook the meat with onions, pepperoncinis and spices and boy is it tasty!

Tried two new recipes tonight: oregano shrimp (so easy - mixed olive oil, red onions, oregano, salt and pepper than coat shrimp and saute. The side was a salad w/olive oil, dill, lemon zest, cherry tomatoes, feta and quinoa (recipe called for orzo). I added a bit of oregano and mint to brighten it up a bit.

Taco soup, corn bread, & red velvet cake. Have a batch of blueberry muffins in the oven right now so breakfast will be ready when we want it in the morn.

We had marinated crab tonight. It's a tradition for my husband's birthday(which falls on Monday this year.)

Both of those sounds delicious! Mom and dad were up tonight for DS's Christmas concert, so I made a chicken alfredo w/mushrooms and orange pepper. Ended up using Manchego cheese because what I *thought* was Asiago cheese turned out to be horseradish cheese! NOT what I wanted in an alfredo sauce. The Manchego worked nicely. Mom is not eating any dairy or bread, so I made up quinoa for her then just sauteed some chicken, mushrooms and pepper in a small pan w/a bit of Thai green curry sauce that I had also used to season the quinoa. She loved it, and it wasn't much extra work. DH made some baked apples for dessert and we were all doing good NOT to sleep through the concert! LOL

Realized I had only 2 ingredients necessary for making shrimp curry, so we went with chili. DS was NOT happy, but lived with it when I threw in a pack of hot dogs I found in the freezer. He and DH did chili cheese dogs (gag!!!!), and I just enjoyed the chili!

Tonight's New Year's Eve feast with be steak fajitas with all the fixins. Actually, I'll be cooking it up at about 3 PM, hoping to eat around 4.

It has always only taken an hour for my black-eyed peas to get done. I ended up not cooking any today for the first time on New Year's day in years. Hubby ate leftover spaghetti, and I made me a salad and some cottage cheese.

We've got ribs slow cooking in the oven. It's the first time I've made them, but we put a rub on them first, let them stew a bit in the fridge (4 or so hours), now their in sealed tin foil packets w/a sauce made from cider, honey, cayenne, garlic and mustard. In another couple hours (after bout 4 hours of cooking), I'm supposed to take the juices from one packet, boil them down to a sticky glaze, open the packets, cover the ribs w/the glaze and broil them for another 5 minutes. We'll be having mashed potatoes with them - and I've got one steak thawed just in case this experiment goes wrong! LOL (The recipe had great reviews, but until it's in my mouth, I don't trust anything!)

The ribs were a success, but my SPELLING in that last post was a failure. THEY'RE in sealed packets not THEIR! (Duh!!!)
