For any particular occasion? We used to make a modified trifle. Super easy. Tear up angel food cake. Mix it with Cool Whip. Layer in trifle bowl with a can of cherry pie filling. Really pretty and easy (and not that fattening). But speaking of trifle, I think trifle is a lovely dessert. You don't have to make a chantilly cream and you don't have to use ladyfingers. You can use pound cake or angel food cake, vanilla pudding, and any fruit in season (peach trifle right now would be delish).

Scrumptious Dessert 1 cup whipping cream, whipped 1 250 mL container sour cream 1 bag miniature marshmallows 1 can mandarin oranges, drained 1 can pineapple tidbits, drained about 2 cups of green grapes, halved Mix all in large bowl and let sit overnight in the fridge. Easy, peasy, and as the title says, scrumptious.

for father's day. my problem is I do trifles, pies, cheesecakes...i am just bored! LOL my son said do a sunday since it's sunday! LOL my husband loves peaches, but i don't really want to heat up the house by making a cobbler. I could do a peach trifle, but I haven't had luck with the peaches here. i am just bored. part of the issue is my dad's wife can't eat chocolate and yes, it's father's day, but i would never hear the end of it if i served anything chocolate........

Oh no chocolate. There goes another idea. How are your strawberries there, Annie? Or cherries? What about doing a sundae but making it with fresh fruit (strawberries or cherries). No oven, but you could could a lovely cherry sauce. Or do a make your own sundae bar. Get all the fixin's and let people make their own. That way, the step mom person wouldn't have to have chocolate. Ice cream cake or ice cream pie? Or heck, even homemade ice cream! Grilled pineappple? Lemon mousse? Mini fruit tarts? (You can use puff pastry instead of tart shells, make them free form, bake them off ahead of time, and fill with custard or pudding and top with fresh fruit.) OOH! I found a recipe for carmelized pineapple sundaes with coconut! Yum! (It's grilled not baked!) Parfaits, made with jello? Make a batch of jello, soft set it. Take half and mix with whipped topping. Then layer the two (plain and mixed with whipped topping) in parfait glasses or other lovely glasses (margarita glasses work too). Top with fresh sliced fruit. Anything trigger something there?

i'm making homemade strawberry ice cream with strawberries i've picked from our garden (mr. hopalong can't do it yet and i'm delegated to help until Holly returns home) for father's day celebration at mr. hopalong's family. i asked that they postpone this year because it's just too much to do..... but nooooooooooo "dad" couldn't do without everyone together (minus Holly). personally I'd fix chocolate Annie. I slip onions into my FIL's dishes (he thinks he's allergic - he ain't) and i've put pork into the vegetarian SIL's food too. LOL. teach them for being so mean to me.

What about this, Tex? It's a Meyer lemon semifroddo. Half custard, half whipped cream, folded together and then frozen. It's heavenly, light, and super delicious. A bit time consuming to make, but once it's together, it's a "set it and forget it" deal. ooohhh...those are good ideas too. My strawberries are great right now, as are blueberries. That's why I am really not all that thrilled about peaches (plus i am not a big fan! LOL) Right now I am torn between these two ideas Peach Melba Ribbon Pie big.http://www.kraftrecipes.com/recipes/peach-melba-ribbon-pie-54731.aspx what you need 1 pkg. (10 oz.) frozen raspberries, thawed 1 pkg. (4-serving size) JELL-O Raspberry Flavor Gelatin 1/2 cup boiling water 1 Tbsp. lemon juice 1 can (8-1/2 oz.) sliced peaches, drained, divided 2 cups thawed COOL WHIP Whipped Topping, divided 1 OREO Pie Crust (6 oz.) make it PUREE raspberries and their liquid in electric blender container; set aside. DISSOLVE gelatin in boiling water in small bowl; stir in pureed raspberries and lemon juice. Refrigerate until mixture mounds when dropped from spoon. RESERVE 6 peaches for garnish; chop remaining peaches. Fold chopped peaches into 1 cup prepared whipped topping. Spread peach mixture into prepared crust; carefully top with gelatin mixture. Refrigerate until firm, about 3 hours. Landi, she is evidently DEADLY allergic to garlic. I didn't know this when she was dating my dad and fixed meals with garlic all the time..... she's still here

Both look good Annie, but... this is the season of fresh fruit! YOU have fresh strawberries and blueberries. Save these recipes for that time of year when fresh fruit isn't around. Just sayin'...

LOL Glenn! i sort of changed up the recipe a little to please everyone. i made a blueberry filling layer, then peach filling, then topped it all off with some fresh macerated blueberries and strawberries. the marscapone/whipped cream layer is just divine!!! but really, how could it not be??
