LOL, I went out for Chinese food, but the restaurant was on vacation so we ended up at Mexican, which I have wanted for weeks.

I had enchiladas / rice & beans / margaritas / chips / guacamole !!! It was heaven.

Funny how lifestyles differ! Our main meal is at midday (11-1) That one is soup of the day and tossed or fruit salad, a choice of three entrees, four sides and a choise of two desserts, not inslucing ice cream/sherbets of which there are five or six flavors.available - these cchange weekly.Supper (evening) is usually a single casserole-type dish and the a la arte menu. More about that option in another post!

Funny how life styles differ! Our main meal is at noon (11-1) with soup of the day, tossed or fruit salad, three entrees, four sides, and two desserts in addition to ice cream/sherbets (5 choices which change weekly). Supper (evening) is simple with a single main(usually a casserole), soup salads, and sandwiches. The a la carte menu iss available from 10 to 6 with coup, salads, sandwiches including grilled cheese, ham/cheeseburgers, chicken tenders, baked sweet or Irish potatoes, or fries and various desserts.

Last Night -- Marsala Roast -- roasted beef in Marsala Wine, mushroom sauce served over mashed potatoes and roasted carrots

OR

Garden Vegetable Pasta -- pasta with garden veggies in a marinara sauce.

Since I went for Chinese food and donuts for lunch and was stuffed I skipped dinner.

TNT, we only have 2 meals at this community, breakfast and dinner. All the apartments have full kitchens so people can make lunch or go out.

I often have leftovers from dinner for lunch.

How many residents are at your community?

Chicken Marsala -- chicken breast cooked in mushroom marsala wine sauce, served over creamy polenta and steamed carrots

OR

Shepherd's Pie - Beef and veggies cooked together topped with a layer of cheesy mashed potatoes.

Key Lime Pie for dessert.

Shepard's Pie was very good, dessert was nice and tart and I heard someone say the cooked the carrots well tonight, LOL.

Shrimp Ceviche -- shrimp, cucumber, red onion, tomatoes, lime juice and cilantro on a tostada

OR

Big Red Enchilada Casserole -- cheese and corn tortillas layered and baked in red enchilada sauce, served with black bean puree, topped with corn pico de gallo and sour cream.

Brownie for dessert.

LOL, I had leftover chinese and picked up a serving of the shrimp.

I will have it tomorrow for lunch, I always really like it.

The casserole is very good as well.
