Yummy!! I had half and half and ended up bringing half home. The quinoa was really good, the chicken had a great sauce, the pesto was fabulous AND ...
we had lemon pudding which was really good. I had it with whipped cream!

I skipped dinner since I went for Chinese lunch and have leftovers ... but I requested 2 pieces of carrot cake.
Just got back from going to get my cake .... It wasn't carrot cake!!!!
I think it is Black Forest Cake, LOL.

I had the Spaghetti, it was excellent with a ton of parm shredded over the top.
AND dessert was Carrot CAke!!!! I got a couple of pieces to go, so I can have them with coffee in the morning.

My breakfast blueberry muffin has barely enough muffin to hold the blueberries together! Our kitchen is working its way back up to what I hear "normal" used to be!!
The ginger beef at mid-day was also excellent!!!

Love grilled cheese. DH made the best ones, always a treat. Haven't had a grilled cheese since... I suppose I should attempt to make it myself at some point. I used the George Forman grill, DH used a frying pan.

We had our 4th of July dinner Monday. Grilled pork ribs, Mrs Mack’s homemade baked beans, corn on the cob and strawberry shortcake. Why yesterday instead of on the 4th? Mrs Mack did most of the meal and I grilled the ribs. She has to go into work on the 5th so that means getting up at 5:15 AM so better she is not pooped by food prep on the 4th. For the 4th we’ll have grilled ribeyes, baked potatoes, romaine salad wedges, and another round of strawberry shortcake. I’ll do most, actually all, of the cooking today so Mrs Mack can relax. Helps that she is just now recovering from her third trip to Poland this year and the return flight last week got caught up in the massive airline delays and cancellations. Took her nearly 48 hours to get home versus the 16 or so it should have been.

Glad Mrs. Mack is home safe. Sounds like two great meals in a row.
We're ordering take out today with bar-b-q chicken, ribeye, mac-n-cheese, mashed potatoes, broccoli salad and cornbread. The watermelon was finished off yesterday so dessert will most likely be ice cream. Happy Fourth to us in the states.
