tonight ....
Open Flame Pot Roast - marinated chuck, grilled in open flame, then slow roasted in herbs, served over mashed potatoes, gravy and steamed carrots
OR
Mamma Mia Lasagna -- tomato basil sauce, layered with pasta, spinach, cheese and baked until golden delicious.
Cream -filled cannoli for dessert.

I really am becoming jealous at your dinner choices Dipo, lol! Can I ask what the company is that owns the place you live at? In other words, do they have locations in other cities or states similar to how Del Webb is located in several states?
The BBQ did sound delicious! And it would be a tough choice for me between the pot roast and lasagna. Bon appetit whatever your choice.

LOL, it's owned by Carlton Senior Living Corporation. They have a lot of assisted living / memory care housing and this project is their only independent living facility in this area.

Tonight -- Lemon Dill tilapia served over rice pilaf with Steamed broccoli and carrots
OR
Cheese Ravioli Bolognese -- stuffed raviolis topped with meaty tomato basil sauce.
Carrot Cake for Dessert.

But SURPRISE we had Salmon instead. I had the Salmon. Everything was great and I had 2 pieces of carrot cake, LOL.

Thank you for the reply Dipo. I'm making a folder for myself as to ideas for options later. After a bad fall in the garden, it was feeling more urgent than normal this past week, lol!
Lemon Dill tilapia/salmon vs Cheese Ravioli - tough call!! And yum for carrot cake.

Seared Pork Chop - marinated and seared pork chop
OR
Baked Chicken - breaded and baked til golden brown
Both served with mashed potatoes, gravy and green bean casserole

I live in a Brookdale Senior Living (independent) facility in Franklin, TN - just outside of Nashville. Brookdale is cited in U.S. News and World Report for its excellence this year - I am very well satisfied!

Special Sandwich: The Carlton Dog is BACK -- All beef hot dog topped with onion, relish and tomatoes.
Special Salad: Iceberg Wedge Salad - wedge topped with a hard boiled egg, bacon, tomatoes, red Onions, blue cheese dressing and balsamic glaze
Special Potato: Baked Russet served with butter, sour cream, cheddar cheese.

White Bean Chicken Chili -- white bean, chicken sausage, bacon, peppers and tomatoes served with sweet cornbread.
