we grilled out yest....steak, chicken breasts, & sausages. Frank was already eating some of the steak when I got home from the office so I guess I'll put me something together from the left overs as well. Unless, I go ahead & make a homemade pizza like I was planning to do......

I prepared this week's Stone Soup: Large package of of chicken thighs, can crushed tomatoes and juice, can of mixed beans, powdered chicken flavour, dill flakes, brown rice, in a big pot of water. Boil til chicken falls off the bone. Very hearty and tasty.

Had a "Big Mac" in a bowl and rutabaga "fries". Delish, easy to prep,low carb meal that was legal on my diet plan, that hubby could eat too. "Big Mac" in a bowl is lean hamburger cooked and drained on tossed with chopped lettuce, onion, dill pickle and thousand island dressing. I used Walden Farms 0 fat 0 calorie dressing, hubby used regular.

Made a stew but realized too late (after cutting up all the veggies for the crockpot) that I had no stew meat! We put a sirloin tip roast on top of the veggies, topped it with the sauce and let it cook all day. It was a wonderful treat to come home in the rain, wind and cold to have supper totally done! The roast was super tender, so DS just cut the whole thing up and mixed it in w/the veggies for the last couple hours of cooking. (YAY for DSs who help out when they arrive home earlier than the parents!)

Pea soup and cornbread. The best pea soup I've ever had, cause it was a welcome home dinner for Mom, who discharged from the nursing home today!!!

It is sooooo easy, and it can be frozen before the final step, so we enjoy it all winter. Clean and chop 1 - 1 1/2 lb. asparagus and 2 leeks. Saute leeks (can add garlic, too) in 2-3 Tb butter/olive oil mix until softened. Add in asparagus and 2-3 small yukon gold or other starchy potatoes, chopped. (I also add in about 2 tsp. dried basil just for a bit of flavor - but it isn't in the original recipe.) Saute and stir until coated - 5 minutes or so- then add 1-2 quts chicken or veggie stock and bring to a boil. Lower heat and simmer until all veggies are tender. Use an immersion blender or mixer to puree. Add in 1 tsp. lemon juice and 1 tsp. white pepper. Mix. The pepper is a fabulous addition and doesn't it make is spicy! I sometime add salt - depends on what kind of stock I use and if it needs it. At this point, the soup can be frozen. To serve- heat and add 1 C cream and 1/2 C buttermilk or Greek yogurt. Stir until thoroughly heated. Garnish with additional asparagus tips or roasted red pepper slices for a Christmas colored soup. Our town produces more asparagus than any place in the USA, but I've never had any luck figuring out how to freeze it. I HATE mushy asparagus, and every method I've tried has resulted in soggy stalks. Instead I put up at least 10-20 pounds of asparagus via this soup method. Hope you enjoy it!

Made some Salisbury steak with gravy from scratch, with a side of mashed potatoes, of course. Turned out really well, I tried a new recipe and forgot a couple of things but it worked out anyway, LOL.

We had spaghetti and garlic bread. Nothing particularly amazing about that other than yours truly made the sauce and no I didn't start with a commercial sauce like Ragu. I like to start my sauce a couple of hours before so that the spices really blend in. My wife has taught me well.

No, Dogdoc no, never ever ever, not even on day 36 of Survivor . I roasted carrots and potatoes and reheated leftover pork chops. Full disclosure, the veggies were a bit "crispy" and the chops dry and I find it far preferable to ugg, livers, shudder. To each their own, Dogdoc, I hope your dinner was tasty for you.

I had exactly 15 minutes to cook, so I made veggie pasta (the water boiled while I was taking a shower), then made a quick vodka cream tomato sauce with mushrooms. Cooked, ate, and was out the door in 30 minutes! Gotta' love fast meals when it's musical theatre season! Yesterday it was 15-minute vegetarian tacos!
