I just threw a meatloaf in the oven. 2 pounds hamburger 1 pound ground pork. We are having a sort of late lunch early dinner combination meal at around 3 or 4 o'clock.

I can't remember the last time I had Spam! Had parsnips today, myself-love them.

Just made tomorrow's dinner ahead of time, so we can heat n' eat.

Liver, bacon, onions, mushrooms & green peppers.

Tried a new faro & roasted rutabaga salad tonight. It was fantastic! I just put a great big 6.35 lb chicken on the Showtime rotisserie. It should be done in about 95 minutes. I'm just having a small dinner salad with mine, but DH has to have his mashed potatoes :-)

Homemade shepherd's pie today. Yesterday it was homemade stew. They take some prep but then you have leftovers you can freeze. :-)

Yummy black bean soup that features finely diced onions, poblanos, and carrots with seasoning provided by homemade taco spices and a bit of Worcestershire sauce. This lovely winter soup was accompanied by mile-high whole wheat biscuits.

At the end of two killer weeks with yet another to come, tonight was just a matter of cooking 2 Galician rolls in the oven, topping them with organic cheddar, and then adding a clementine with it. Done. I just may have the energy to pour a dram of whisky before heading to bed. :-)

PS - the rolls are super delicious! They're made in Spain and a store in Virginia (La Tienda) imports them frozen so all you have to do is heat them for 10 minutes.

We are making corned beef and cabbage tonight since my husband is working late on St. Patrick's Day. My son was coming over but it's raining way too hard right now. I'd rather they be safe and dry.

Roasted butternut squash, broccoli coleslaw with homemade yogurt-lime dressing, and sauteed pork. Also homemade apple sauce. Finally, homemade blueberry pie for dessert. Yum.
