We call it sopapilla cheesecake. LOL
http://www.food.com/recipe/crescent-sopaipilla-sopapilla-cheesecake-88420
but whatever it's called, it is dang good and super easy. i even made one for a Starbucks leadership coffee tasting to pair with one of our coffees, and they were stunned to find out what exactly it was.

:-) We clearly all have delightful taste! I added a bit of extra cinnamon in with the cream cheese when I made it today. Hope the kids enjoy it tomorrow, but if they don't, there will be leftovers for DH & I - WIN-WIN!

That is some good stuff, my MIL makes it. We've made it for 80 down at Lodge.

I have finally figured out to keep and use avocados before they go bad and I just have to throw them out, but I cannot figure out cucumbers. It seems to never fail that they get moldy on the outside before I have a chance to use them. Annoying, since I don't want to waste food and money.

I like to have sliced cucumber on my sandwich, and of course in salads. Can they be frozen or anything?

Amy ideas?

do you refrigerate the cucumbers? i think you can slice them and put them in water in a container and they would keep.

If you are talking about the meat of the avocado turning brown, a little lemon or lime juice will help prevent the browning.

LOL, usually when I get them they are hard as a rock and I keep them on the counter, then when they are close to ripe I put them in the fridge. They stop ripening so I have them longer. I don't have any special way to keep them from turning brown.

As for the cucumbers I do keep them in the vegetable crisper, are you supposed to keep them out?

Ranch Style Dressing
1 C. buttermilk powder (I get it at the bulk food store)
3 Tbsp onion powder
1 Tbsp dried minced onion
1 Tbsp garlic powder
1/4 C dried parsley flakes
1/2 Tsp ground black pepper
salt to taste (up to 1 tsp, I don't use any)
Mix well and store in a jar with a tight lid.
Use 2-3 Tbsp with 1/4 C sour cream, mayonnaise, or yogurt. Add a tsp of milk if it is too thick.

You can use any kind of the wet ingredients. As low fat or as full fat as you prefer.

Have they been sealed? If so, definitely. If not, do that have white on them? If they do, toss 'em. If not, I'd taste one and see.

The chocolate chips are fine even if white as long as they taste good. The white is just the oils moving up. (They say the chocolate has "blossomed" when that happens.)

New Q; I am making a onion soup that I saw on Rachel Ray, it calls for a bottle of pale ale. 1, it doesn't say how many ounces and 2, you cant buy only one bottle. So what can I substitute, any ideas?

I would think you could buy just one bottle of pale ale at a convenience store. You can probably substitute light beer.

Usually 12 oz. And wine would be a totally different flavor.

Thanks. I am not sure what the flavor change would be with the ale, but it turned out fine using the wine.
